“Why did she have to go and mess with a good thing?” you may ask. Let me tell you, it was not my intention to bring gluten-free flour into this, but with Marissa and I trying to eat healthier recently, we have been using rice flour for a lot, and I was feeling adventurous.
After hour 3 of Shameless reruns, I was craving some waffles. Despite the box of frozen Eggo in the fridge, I wanted something better. Luckily, I have a kitchen full of supplies for just the occasion. Kids will love these. The benefit of the rice flour is that they are cakier than normal waffles. I topped them with some Reddi whip and berries and my craving was happily satisfied.
Funfetti Waffles (Gluten Free)
Ingredients
- 3 egg whites
- 2 c gluten free flour (I used rice)
- 3/4 c fat free milk
- 1 1/2 tsp vanilla
- 2 tbs granulated sugar
- 4 tsp baking powder
- rainbow sprinkles
Instructions
- Combine all ingredients in bowl, add sprinkles.
- Turn on waffle iron and spray with cooking spray.
- Pour about 1/3 cup batter into each waffle, let cook for about 4 minutes or until browned and no longer liquid in middle.
These waffles look amazing! Wonderful idea adding sprinkles in it. My kids will have so much fun making these with me! We love gluten free treats,Can’t wait to try this soon.😊
